Ingredients

  • 2 c. sliced beets
  • 1/3 c. raisins
  • 1/4 c. sugar
  • 1 tsp. cornstarch
  • 3 Tbsp. lemon juice
  • 2 Tbsp. butter

Method

  • Drain beets, reserving 1/3 cup liquid.
  • In medium saucepan, combine reserved beet liquid and raisins.
  • Cover.
  • Simmer until raisins are plump, about 5 minutes.
  • Combine sugar and cornstarch. Stir into raisins in pan.
  • Add lemon juice and butter.
  • Cook and stir over medium heat until slightly thickened.
  • Stir in beets and simmer until mixture is heated through, about 5 minutes.
