Ingredients
- 2 c. sliced beets
- 1/3 c. raisins
- 1/4 c. sugar
- 1 tsp. cornstarch
- 3 Tbsp. lemon juice
- 2 Tbsp. butter
Method
- Drain beets, reserving 1/3 cup liquid.
- In medium saucepan, combine reserved beet liquid and raisins.
- Cover.
- Simmer until raisins are plump, about 5 minutes.
- Combine sugar and cornstarch. Stir into raisins in pan.
- Add lemon juice and butter.
- Cook and stir over medium heat until slightly thickened.
- Stir in beets and simmer until mixture is heated through, about 5 minutes.
