Ingredients

  • 1 baked pie shell
  • 1 1/2 c. raisins
  • 1 c. water
  • 2 eggs
  • 1/2 c. sugar
  • 2 Tbsp. cornstarch
  • 2 c. milk
  • 1 Tbsp. butter
  • 1 tsp. vanilla
  • Cool Whip (optional)

Method

  • Boil and simmer water and raisins about 20 minutes (cover with lid).
  • Beat eggs with wire whip in bowl.
  • Mix sugar and cornstarch; mix in with eggs; add milk.
  • Add to cooked raisins and cook to boil.
  • Remove from stove; add vanilla and butter.
  • Cool and refrigerate.
  • May top with Cool Whip.
