Ingredients

  • 2 Tablespoons Olive Oil
  • 1 Small Onion, Chopped
  • 8 cloves Garlic, Minced
  • 1 pound Ground Italian Sausage
  • 6 ounces, weight Canned Tomato Paste
  • 6 ounces, weight Water
  • 24 ounces, weight Canned Fire-Roasted Crushed Tomatoes, Pureed
  • 2 Tablespoons Sugar
  • 1 pinch Garlic Powder
  • 2 pinches Dried Oregano
  • 2 pinches Dried Basil
  • Salt And Pepper, to taste

Method

  • 1.
  • Heat the oil in a large pan or deep skillet over medium heat.
  • Add the onion and garlic and cook until the onion starts to soften.
  • Be careful not to burn the garlic.
  • This takes about 2-3 minutes.
  • 2.
  • Place the Italian sausage in the pan with the garlic and onion and brown meat until cooked.
  • 3.
  • Add the tomato paste, water, pureed fire-roasted tomatoes, sugar, garlic powder, oregano, basil and salt and pepper.
  • 4.
  • Bring the mixture to a boil then reduce heat and let sauce simmer for 2 hours (or more).
  • I do not completely cover the pot while the sauce is simmering.
  • I place the lid on at a tilt to keep the sauce from splattering all over my kitchen.
  • 5.
  • Serve over pasta.
