Ingredients
- 1 c. raisins
- 1/2 c. water
- 1 c. cream (half and half)
- 3/4 c. white sugar
- 3 egg yolks
- 2 Tbsp. flour
- 1 tsp. cinnamon
- 3 egg whites
- 6 Tbsp. white sugar
- 1 baked 8-inch pastry shell
Method
- Combine raisins and water.
- Simmer 5 minutes.
- Add next five ingredients which have been mixed into a smooth paste.
- Cook over direct heat, stirring constantly, until thick.
- Pour into baked pastry shell.
- Beat egg whites until frothy.
- Add white sugar gradually.
- Beat until stiff peaks are formed.
- Top pie filling with meringue and bake at 400° until lightly browned.
