Ingredients

  • 1 c. raisins
  • 1/2 c. water
  • 1 c. cream (half and half)
  • 3/4 c. white sugar
  • 3 egg yolks
  • 2 Tbsp. flour
  • 1 tsp. cinnamon
  • 3 egg whites
  • 6 Tbsp. white sugar
  • 1 baked 8-inch pastry shell

Method

  • Combine raisins and water.
  • Simmer 5 minutes.
  • Add next five ingredients which have been mixed into a smooth paste.
  • Cook over direct heat, stirring constantly, until thick.
  • Pour into baked pastry shell.
  • Beat egg whites until frothy.
  • Add white sugar gradually.
  • Beat until stiff peaks are formed.
  • Top pie filling with meringue and bake at 400° until lightly browned.
