Ingredients
- 1 lb. boned chicken breasts, cut into thin strips
- 1 garlic clove, minced
- 2 Tbsp. vegetable oil
- 1 bunch scallions, sliced
- 1/2 c. apricot preserves
- 1/2 c. chili sauce
- prepared Minute rice
Method
- Cook and stir chicken and garlic in hot oil in large skillet or wok until tender and lightly browned, about 7 minutes.
- Stir in scallions, preserves and chili sauce.
- Heat through.
- Serve over rice.
- Supposed to feed 4; 2 or 3 is more like it.
