Ingredients

  • 1 (15 oz.) can sweetened condensed milk
  • 1/2 c. lime juice (at room temperature)
  • 4 eggs, separated and at room temperature
  • 1 graham cracker pie shell
  • 1/8 tsp. cream of tartar
  • 4 Tbsp. sugar

Method

  • Combine milk and lime juice.
  • Add slightly beaten egg yolks. Pour into pie shell and bake 10 minutes.
  • Make meringue by beating egg whites and cream of tartar and gradually adding sugar.
  • Cover pie with meringue, spreading to edges over crust.
  • Bake at 325° until lightly browned, about 10 minutes.
