Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 1 tsp. ginger
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. nutmeg

Method

  • Beat eggs on high speed until fluffy lemon color (5 minutes). Beat in sugar, pumpkin and lemon juice.
  • Set aside.
  • In separate bowl combine flour, ginger, salt, cinnamon, baking powder and nutmeg.
  • Add to egg mixture.
  • Grease and flour large cookie sheet. Pour batter on cookie sheet (batter will be thin).
  • Bake for 15 minutes at 375°.
  • Turn out on towel, sprinkled with powdered sugar and roll using towel's long edges.
  • Cool.
  • Prepare filling.
