Ingredients
- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. ginger
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
Method
- Beat eggs on high speed until fluffy lemon color (5 minutes). Beat in sugar, pumpkin and lemon juice.
- Set aside.
- In separate bowl combine flour, ginger, salt, cinnamon, baking powder and nutmeg.
- Add to egg mixture.
- Grease and flour large cookie sheet. Pour batter on cookie sheet (batter will be thin).
- Bake for 15 minutes at 375°.
- Turn out on towel, sprinkled with powdered sugar and roll using towel's long edges.
- Cool.
- Prepare filling.
