Ingredients
- 4 cups pumpkin cooked mashed
- 2 cups pumpkin grated raw, blanched and trained
- 1 teaspoon baking powder
- 1/2 cup flour
- 1/2 teaspoon salt
- 1 egg
- oil
- sugar
Method
- Mash the cooked pumpkin and grated blanched pumpkin together in a mixing bowl.
- Sift in the flour, salt and baking powder. Mix until the, mixture is smooth and soft.
- Beat an egg well and combine it with the mixture until it is well-blended.
- Heat the oil in a frying pan. When hot, drop in spoonfuls of the pumpkin, mixture. Fry the fritters on both sides until they are a light-brown colour.
- Remove the fritters and drain on paper towels.
- Place fritters on a serving platter and sprinkle with cinnamon sugar.
