Ingredients

  • 4 cups pumpkin cooked mashed
  • 2 cups pumpkin grated raw, blanched and trained
  • 1 teaspoon baking powder
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 egg
  • oil
  • sugar

Method

  • Mash the cooked pumpkin and grated blanched pumpkin together in a mixing bowl.
  • Sift in the flour, salt and baking powder. Mix until the, mixture is smooth and soft.
  • Beat an egg well and combine it with the mixture until it is well-blended.
  • Heat the oil in a frying pan. When hot, drop in spoonfuls of the pumpkin, mixture. Fry the fritters on both sides until they are a light-brown colour.
  • Remove the fritters and drain on paper towels.
  • Place fritters on a serving platter and sprinkle with cinnamon sugar.
