Ingredients

  • 4 c. flour
  • 2 c. quick or old-fashioned oats (uncooked)
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/2 c. margarine
  • 2 c. brown sugar
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 (16 oz.) can pumpkin
  • raisins or nuts (optional)

Method

  • Cream the margarine.
  • Add sugars; beat well.
  • Add the egg and vanilla.
  • Add all dry ingredients and the pumpkin.
  • Add 1 cup of chopped walnuts or raisins, if desired.
  • With teaspoon, drop dough on greased cookie sheet, spreading into desired shape.
  • Bake at 350° for 20 to 25 minutes, until firm and lightly browned.
  • Cool on racks.
