Ingredients

  • 1 12 cups brown sugar
  • 4 eggs
  • 1 cup white flour
  • 12 teaspoon salt
  • 2 teaspoons baking soda
  • 1 14 cups vegetable oil
  • 2 cups canned pumpkin
  • 1 cup whole wheat flour
  • 1 tablespoon cinnamon
  • 8 ounces neufchatel cheese, softened
  • 12 cup butter, softened
  • 1 cup confectioners' sugar (more or less to taste)
  • 1 teaspoon vanilla extract

Method

  • Preheat oven to 350.
  • Blend sugar and oil.
  • Beat in eggs until light.
  • Add pumpkin and mix well.
  • Combine dry ingredients.
  • Gradually add to pumpkin mixture and mix thoroughly.
  • Pour into a lightly greased 9X13 pan.
  • Bake 30-40 minutes.
  • Cool on wire rack.
  • Beat remaining ingredients for frosting and frost cake when cool.
  • Store in refrigerator.
