Ingredients
- 15 cucumbers (3 or 4 inches long)
- 1 tsp. alum
- 4 c. cider vinegar
- 8 c. white sugar
- 1 stick cinnamon
- 2 tsp. mixed spices
- 5 tsp. salt (not iodized)
Method
- Put the cucumbers in stone jar.
- Pour boiling water over for 3 days (change).
- Put alum over cukes on the fourth day and cover with boiling water.
- Wash on fifth day and cut up in 1/2 inch or thicker slices and put back in jar.
- Bring the vinegar, sugar, cinnamon, mixed spices and salt to a boil and pour over the cukes in the jar.
- Makes 4 gallon jars - 1/2 bushel.
