Ingredients

  • 15 cucumbers (3 or 4 inches long)
  • 1 tsp. alum
  • 4 c. cider vinegar
  • 8 c. white sugar
  • 1 stick cinnamon
  • 2 tsp. mixed spices
  • 5 tsp. salt (not iodized)

Method

  • Put the cucumbers in stone jar.
  • Pour boiling water over for 3 days (change).
  • Put alum over cukes on the fourth day and cover with boiling water.
  • Wash on fifth day and cut up in 1/2 inch or thicker slices and put back in jar.
  • Bring the vinegar, sugar, cinnamon, mixed spices and salt to a boil and pour over the cukes in the jar.
  • Makes 4 gallon jars - 1/2 bushel.
