Ingredients

  • 160 grams cooked king prawns
  • 1 mango
  • 2 spring onions
  • 1 mini red pepper
  • 70 grams rocket
  • 1 lime
  • 1 chilli
  • 1 clove garlic
  • 1 tbsp soy sauce
  • 1 tbsp olive oil, extra virgin
  • 1 tbsp balsamic vinegar
  • 2 pinch chopped coriander

Method

  • For the dressing: juice the lime, add chopped chilli, coriander and garlic and mix in the soy, olive oil and balsamic vinegar.
  • Season with salt and pepper.
  • Mix well.
  • Prepare the mango and add the diced flesh to the prawns and rocket.
  • Roughly chop the red pepper, finely chop the spring onions and add.
  • Add the dressing to the salad, or serve on the side.
