- 160 grams cooked king prawns
- 1 mango
- 2 spring onions
- 1 mini red pepper
- 70 grams rocket
- 1 lime
- 1 chilli
- 1 clove garlic
- 1 tbsp soy sauce
- 1 tbsp olive oil, extra virgin
- 1 tbsp balsamic vinegar
- 2 pinch chopped coriander
Method
- For the dressing: juice the lime, add chopped chilli, coriander and garlic and mix in the soy, olive oil and balsamic vinegar.
- Season with salt and pepper.
- Mix well.
- Prepare the mango and add the diced flesh to the prawns and rocket.
- Roughly chop the red pepper, finely chop the spring onions and add.
- Add the dressing to the salad, or serve on the side.
