Ingredients
- 1 Tbsp. olive oil
- 1 medium onion, sliced
- 3 medium potatoes (about 1 1/4 lb.), peeled and cubed
- 1 c. Roma tomatoes, undrained
- 1/4 tsp. crushed oregano
- 1/2 tsp. basil
- salt and pepper, to taste
Method
- Place oil and onions in a skillet and cook on low for 3 minutes.
- Add potatoes and tomatoes.
- Season with spices and cover.
- Cook on medium-low for about 20 minutes.
- Uncover and cook an additional 5 minutes or until potatoes are tender.
- Serves 4.
