Ingredients

  • 2 medium potatoes, pared and sliced
  • 2 medium onions, chopped
  • 4 ribs celery, chopped
  • 3 1/2 Tbsp. butter
  • 1/2 tsp. salt
  • 1/2 bay leaf (optional)
  • milk (for thinning soup)
  • salt
  • paprika
  • dash of Worcestershire sauce
  • boiling water

Method

  • Saute first 3 ingredients together in 1 1/2 tablespoons butter. Add boiling water to cover.
  • Add salt and bay leaf.
  • Boil vegetables until potatoes are tender.
  • Place in blender.
  • Add 2 tablespoons butter.
  • Thin soup with milk.
  • Add salt, paprika and dash of Worcestershire.
  • When ready to serve, garnish with parsley, chives, cut up franks or diced ham or croutons.
  • Serve hot or cold.
