Ingredients
- 2 medium potatoes, pared and sliced
- 2 medium onions, chopped
- 4 ribs celery, chopped
- 3 1/2 Tbsp. butter
- 1/2 tsp. salt
- 1/2 bay leaf (optional)
- milk (for thinning soup)
- salt
- paprika
- dash of Worcestershire sauce
- boiling water
Method
- Saute first 3 ingredients together in 1 1/2 tablespoons butter. Add boiling water to cover.
- Add salt and bay leaf.
- Boil vegetables until potatoes are tender.
- Place in blender.
- Add 2 tablespoons butter.
- Thin soup with milk.
- Add salt, paprika and dash of Worcestershire.
- When ready to serve, garnish with parsley, chives, cut up franks or diced ham or croutons.
- Serve hot or cold.
