Ingredients
- 2 c. hamburger (1 lb.)
- 2 Tbsp. grated onion
- 2 Tbsp. minced bacon
- 1 tsp. minced parsley
- 4 beaten eggs
- 1/2 c. milk
- 1/2 c. tomato juice
- pinch of nutmeg
- salt and pepper to taste
- 1 c. uncooked rice
- 1 can mushroom soup
Method
- Mix hamburger, onion, bacon and parsley.
- Mix in other ingredients and shape into balls, then brown in shortening.
- When browned, add the soup and tomato juice.
- Bake in a slow oven or covered skillet for 1 1/2 hours.
- When done, the rice will stand out like the quills of a porcupine.
