Ingredients

  • 2 c. hamburger (1 lb.)
  • 2 Tbsp. grated onion
  • 2 Tbsp. minced bacon
  • 1 tsp. minced parsley
  • 4 beaten eggs
  • 1/2 c. milk
  • 1/2 c. tomato juice
  • pinch of nutmeg
  • salt and pepper to taste
  • 1 c. uncooked rice
  • 1 can mushroom soup

Method

  • Mix hamburger, onion, bacon and parsley.
  • Mix in other ingredients and shape into balls, then brown in shortening.
  • When browned, add the soup and tomato juice.
  • Bake in a slow oven or covered skillet for 1 1/2 hours.
  • When done, the rice will stand out like the quills of a porcupine.
