- 4 cloves garlic -- sliced
- 1/2 bunch green onions -- chopped
- 2 tablespoons olive oil
- 4 each boneless chicken breasts
- salt and pepper
- 1 tablespoon olive oil
- 1 each juice of lemon
- Lemon Rice
- 2 cups water
- 1 cup rice
- lemon pepper
- butter or margarine
Method
- Saute garlic and onions quickly in olive oil; set aside.
- Flatten chicken and season. Brown in 1 tbsp olive oil in skillet. Spoon onions/garlic over chicken. Squeeze lemon juice over chicken. Add small amount of water; cover and simmer on low for 20 minutes.
- Serve with lemon rice.
