Ingredients

  • 4 cloves garlic -- sliced
  • 1/2 bunch green onions -- chopped
  • 2 tablespoons olive oil
  • 4 each boneless chicken breasts
  • salt and pepper
  • 1 tablespoon olive oil
  • 1 each juice of lemon
  • Lemon Rice
  • 2 cups water
  • 1 cup rice
  • lemon pepper
  • butter or margarine

Method

  • Saute garlic and onions quickly in olive oil; set aside.
  • Flatten chicken and season. Brown in 1 tbsp olive oil in skillet. Spoon onions/garlic over chicken. Squeeze lemon juice over chicken. Add small amount of water; cover and simmer on low for 20 minutes.
  • Serve with lemon rice.
