Ingredients

  • 1 pkg. scalloped potato mix
  • 1 (16 oz.) can tomatoes, crushed
  • 1 1/2 c. water
  • 1/4 tsp. oregano
  • 4 to 6 oz. pepperoni
  • 4 to 6 oz. Mozzarella cheese

Method

  • Put potato slices and packet of seasoning mix into ungreased 2-quart casserole.
  • Heat tomatoes, water and oregano to boiling; stir into potatoes.
  • Mix in cheese and pepperoni (use as much or as little as you like).
  • Arrange more cheese and pepperoni on top. Bake, uncovered, for 30 to 35 minutes.
