Ingredients

  • 4 ounces amaretti cookies
  • 14 cup pecans
  • 13 cup light brown sugar
  • 1 tablespoon butter, cut up
  • 12 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 (20 ounce) cans pineapple chunks, drained

Method

  • Preheat the oven to 350.
  • In a food processor, combine the cookies, pecans, brown sugar, butter, cinnamon and vanilla and pulse until cookies are finely ground.
  • In an 8 inch square baking dish, toss the pineapple with the crumb mixture.
  • Bake for 30 minutes or until the pineapple is piping hot and the crumbs are crusty.
