Ingredients

  • 6 boneless chicken breast halves, skin removed
  • 3/4 c. coarsely chopped onion
  • 3 large garlic cloves, minced
  • 1 Tbsp. vegetable oil
  • 1 1/4 c. chicken broth
  • 1 c. mild red salsa or picante sauce
  • 1 c. converted rice (Uncle Ben's)
  • 1 avocado
  • 1 tomato
  • 1/2 c. Cheddar cheese

Method

  • Sprinkle chicken with salt.
  • Set aside.
  • In a 10-inch skillet, cook onion and garlic in oil for 2 minutes.
  • Add chicken broth and salsa.
  • Bring to a boil.
  • Stir in rice.
  • Arrange chicken breasts over rice.
