- 6 boneless chicken breast halves, skin removed
- 3/4 c. coarsely chopped onion
- 3 large garlic cloves, minced
- 1 Tbsp. vegetable oil
- 1 1/4 c. chicken broth
- 1 c. mild red salsa or picante sauce
- 1 c. converted rice (Uncle Ben's)
- 1 avocado
- 1 tomato
- 1/2 c. Cheddar cheese
Method
- Sprinkle chicken with salt.
- Set aside.
- In a 10-inch skillet, cook onion and garlic in oil for 2 minutes.
- Add chicken broth and salsa.
- Bring to a boil.
- Stir in rice.
- Arrange chicken breasts over rice.
