Ingredients
- 2 cups Peaches And Strawberries (See Note)
- 1 stick Butter
- 1 cup Brown Sugar
- 1 whole Banana
- 1 Tablespoon Cornstarch
- 1/2 cups Milk
- 1 teaspoon Vanilla
- 2 cups Flour
- 2 teaspoons Baking Powder
- 1/4 teaspoons Salt
Method
- Note: Recipe involves pureeing or blending the peaches and strawberries. If you prefer chopped fruit in the muffins, fold them into the batter before baking.
- Puree fruit (if not using chopped) in food processor. Add butter and sugar. Blend. Add banana. Blend.
- Dissolve cornstarch in milk. Add milk mixture and vanilla to food processor. Blend.
- Add flour, baking powder and salt. Blend. (If you choose to use chopped rather than blended fruit, fold in the fruit now.)
- Fill muffin tins. Bake at 375°F for 25-30 minutes.
