Ingredients

  • 2 cups Peaches And Strawberries (See Note)
  • 1 stick Butter
  • 1 cup Brown Sugar
  • 1 whole Banana
  • 1 Tablespoon Cornstarch
  • 1/2 cups Milk
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoons Salt

Method

  • Note: Recipe involves pureeing or blending the peaches and strawberries. If you prefer chopped fruit in the muffins, fold them into the batter before baking.
  • Puree fruit (if not using chopped) in food processor. Add butter and sugar. Blend. Add banana. Blend.
  • Dissolve cornstarch in milk. Add milk mixture and vanilla to food processor. Blend.
  • Add flour, baking powder and salt. Blend. (If you choose to use chopped rather than blended fruit, fold in the fruit now.)
  • Fill muffin tins. Bake at 375°F for 25-30 minutes.
