Ingredients

  • 2 cups sifted flour
  • 2 Tbsp sugar
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter or margarine
  • 12 peach halves
  • 1 cup light brown sugar
  • 1 tsp cinnamon
  • 2 egg yolks
  • 1 cup heavy cream

Method

  • Mix together flour, sugar, baking powder and salt.
  • With a pastry blender, cut in the butter until the mixture resembles coarse cornmeal.
  • Press the flour mixture over the bottom and up the sides of a buttered 10 inch round pan.
  • Places the peaches, cut side up, over the pastry.
  • Combine the brown sugar sugar and cinnamon and sprinkle over peach halves.
  • Bake for 15 minutes.
  • Mix the egg yolks and cream.
  • Pour over the peaches and continue to bake for 30 minutes or until brown.

  • 45 minutes.
  • Serve warm or cool.
