Ingredients

  • 1 pkg. frozen mixed vegetables
  • 1/2 c. water
  • 3/4 c. mayonnaise
  • 1/2 tsp. salt
  • 1 c. cooked rice
  • 1 tsp. grated onion
  • 1 c. chopped ham or tuna
  • 1/2 c. chopped sweet or dill pickles
  • 1 c. Swiss cheese, cut into small pieces

Method

  • Cook frozen vegetables 2 minutes in water and salt.
  • Add rice; stir to moisten all rice.
  • Remove from heat.
  • Let stand 5 minutes, then stir in mayonnaise, pickles and onion.
  • Add meat and cheese, mixing lightly.
  • Serve on crisp greens with tomato wedges.
