Ingredients
- 1 pkg. frozen mixed vegetables
- 1/2 c. water
- 3/4 c. mayonnaise
- 1/2 tsp. salt
- 1 c. cooked rice
- 1 tsp. grated onion
- 1 c. chopped ham or tuna
- 1/2 c. chopped sweet or dill pickles
- 1 c. Swiss cheese, cut into small pieces
Method
- Cook frozen vegetables 2 minutes in water and salt.
- Add rice; stir to moisten all rice.
- Remove from heat.
- Let stand 5 minutes, then stir in mayonnaise, pickles and onion.
- Add meat and cheese, mixing lightly.
- Serve on crisp greens with tomato wedges.
