Ingredients

  • 3 tbsp butter
  • 2 None shallots, peeled and chopped
  • 3 - 8 oz cans button mushrooms, drained
  • 1/2 cup fresh flat-leaf parsley, some reserved for garnish, remainder chopped
  • 12 slices bacon
  • 2 - 10 oz fillets pollack (or cod)
  • 2 cloves garlic, peeled and chopped

Method

  • Melt 2 tbsp butter in a frying pan and saute the shallots until browned. Add the mushrooms and cook for 10 mins. Sprinkle in the parsley and keep warm.
  • Lay the bacon on a work surface so they are slightly overlapping. Place one fish fillet on top and the other fillet, in the opposite direction, on top of that. Roll up tightly and tie with kitchen string.
  • Melt 1 tbsp butter in a frying pan and sear the fish parcel until browned all over. Remove from the pan and cut into 4 pieces. Add the garlic to the pan and saute for 1 min. Add the fish steaks and sear for 3 mins on each side. Season with salt and black pepper. Arrange on plates with the mushrooms and garnish with parsley.
