Ingredients

  • 1 lb. orange roughy
  • 1/4 c. frozen orange juice concentrate
  • 2 Tbsp. lemon juice
  • 1 tsp. dried dill weed
  • 1 tsp. paprika
  • 2 Tbsp. minced, fresh parsley or 1 Tbsp. dried
  • 1/2 c. water
  • 3 Tbsp. plus 3 Tbsp. orange marmalade
  • 2 tsp. cornstarch

Method

  • Place fish in non-metal baking dish.
  • Combine remaining ingredients except marmalade and cornstarch.
  • Mix to dissolve orange juice concentrate.
  • Reserve 1/2 cup for sauce.
  • Pour remaining mixture over fish.
  • Cover fish and marinate in refrigerator at least 45 minutes.
  • Turn at least once.
