Ingredients
- 1 lb. orange roughy
- 1/4 c. frozen orange juice concentrate
- 2 Tbsp. lemon juice
- 1 tsp. dried dill weed
- 1 tsp. paprika
- 2 Tbsp. minced, fresh parsley or 1 Tbsp. dried
- 1/2 c. water
- 3 Tbsp. plus 3 Tbsp. orange marmalade
- 2 tsp. cornstarch
Method
- Place fish in non-metal baking dish.
- Combine remaining ingredients except marmalade and cornstarch.
- Mix to dissolve orange juice concentrate.
- Reserve 1/2 cup for sauce.
- Pour remaining mixture over fish.
- Cover fish and marinate in refrigerator at least 45 minutes.
- Turn at least once.
