Ingredients

  • For "Opa" Salmon:
  • 1-1/2 lbs. Salmon fillet
  • 6 T. Extra Virgin Olive Oil
  • 1 T. Garlic, minced
  • 2 lemons
  • Salt and Pepper to taste
  • 4 slices Kasserri Cheese
  • 1/4 c. Brandy
  • For Lemon Orzo:
  • 1 lb. Orzo
  • 1 lemon
  • 3 T. Extra Virgin Olive Oil
  • 1 T. Garlic, Minced
  • 1/2 c. Parsley, Flat Leaf
  • Salt and Pepper to taste.

Method

  • For "Opa" Salmon:
  • Rinse Salmon and pat dry with paper towel. Combine Garlic, juice of 1/2 of a lemon (reserve the other half to put out the flame.) and Olive oil and rub over all surfaces of the Salmon fillet and season with salt and pepper. Let marinate for 15 minutes. Slice the remaining lemon and arrange the salmon fillet, skin side down, on top of them in an oven-proof dish.
  • Preheat broiler on high.
  • Place the salmon fillet skin side down 4 inches from the broiler. Cook for 6 minutes, remove from heat. Arrange cheese on top of salmon and broil until the cheese starts to bubble. Remove, and put ontop of platter of Orzo. Pour the Brandy over the cheese and light with a long handled lighter, Serve with a hearty "OPA"! and put flame out with the juice of 1/2 of a lemon. Serve and Enjoy!
  • Lemon Orzo:
  • Cook Orzo according to the directions on the package. Drain. Return to the original pan. Add olive oil, garlic, parsley and season with the salt and pepper. Toss over medium heat for 30 seconds, add the juice of 1/2 of the lemon and toss for 30 seconds more. Serve on a platter topped with the "Opa" Salmon and Enjoy!
