Ingredients
- 1 1/2 C quinoa
- 2 cups vegetable broth
- 1/2 cucumber, chopped
- tomatoes, chopped
- bell peppers, chopped
- broccoli
- 1/3 C lemon juice
- 1/4 C EVOO
- sea salt
- pepper
- 2 cloves garlic
Method
- 1. cook quinoa
- 2. once quinoa is cooled, add vegetables
- 3. mix lemon juice, EVOO, sea salt, pepper and garlic and whisk
- 4. Pour dressing on top and mix
