Ingredients
- 1 large onion, chopped
- 4 tsp. oleo
- 3 large potatoes, cut up
- 2 tsp. salt
- 1/2 tsp. basil
- 1/4 tsp. pepper
- 2 c. water
- 1 lb. fresh of frozen fish
- 1 c. corn and liquid
- 1 tall can evaporated milk
Method
- Saute onion in oleo until soft.
- Add potatoes, salt, basil, pepper and water.
- Bring to boil.
- Lower heat and cook 15 minutes. Add fish on top of potatoes.
- Cook 15 minutes more, until fish flakes and potatoes are tender.
- Add corn and it's liquid and milk.
- Heat, do not boil.
- Serves 6.
