Ingredients
- 4 to 6 medium onions, peeled and sliced
- 2 cans beef or chicken broth
- 2 cans water
- 3 Tbsp. butter
- pepper and garlic powder to taste
- 1 Tbsp. parsley
- 1/2 lb. Swiss or Mozzarella cheese
- 4 slices French bread
Method
- Saute onions in butter until limp and tender.
- Add broth, water and seasoning.
- Simmer for 1 hour.
- (You really don't have to, but I like to let the flavors blend.)
- Ladle soup into ovenproof bowls; top with a slice of bread and cheese.
- Broil until cheese bubbles.
