Ingredients

  • 4 to 6 medium onions, peeled and sliced
  • 2 cans beef or chicken broth
  • 2 cans water
  • 3 Tbsp. butter
  • pepper and garlic powder to taste
  • 1 Tbsp. parsley
  • 1/2 lb. Swiss or Mozzarella cheese
  • 4 slices French bread

Method

  • Saute onions in butter until limp and tender.
  • Add broth, water and seasoning.
  • Simmer for 1 hour.
  • (You really don't have to, but I like to let the flavors blend.)
  • Ladle soup into ovenproof bowls; top with a slice of bread and cheese.
  • Broil until cheese bubbles.
