- 1/2 c. shortening
- 1 1/4 c. sugar
- 2 egg yolks
- 1 tsp. lemon extract
- 1/2 tsp. vanilla extract
- 1 1/2 c. shredded carrots
- 1 1/2 c. flour
- 3 Tbsp. baking powder
- 3/4 tsp. salt
- 1/4 c. milk
- 2 egg whites
- Sunshine Sauce
Method
- Cream shortening and sugar in mixer bowl until light and fluffy.
- Beat in egg yolks, flavorings and carrots.
- Mix flour, baking powder and salt in bowl.
- Add to carrot mixture alternately with milk, mixing well after each addition.
- Beat egg whites in bowl until stiff.
- Fold into batter gently.
- Pour into greased 9-inch square baking dish.
- Bake at 350° for 50 to 55 minutes or until lightly browned.
- Top warm pudding with Sunshine Sauce. Yield:
- 12 servings.
