Ingredients

  • 1/2 c. shortening
  • 1 1/4 c. sugar
  • 2 egg yolks
  • 1 tsp. lemon extract
  • 1/2 tsp. vanilla extract
  • 1 1/2 c. shredded carrots
  • 1 1/2 c. flour
  • 3 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/4 c. milk
  • 2 egg whites
  • Sunshine Sauce

Method

  • Cream shortening and sugar in mixer bowl until light and fluffy.
  • Beat in egg yolks, flavorings and carrots.
  • Mix flour, baking powder and salt in bowl.
  • Add to carrot mixture alternately with milk, mixing well after each addition.
  • Beat egg whites in bowl until stiff.
  • Fold into batter gently.
  • Pour into greased 9-inch square baking dish.
  • Bake at 350° for 50 to 55 minutes or until lightly browned.
  • Top warm pudding with Sunshine Sauce. Yield:
  • 12 servings.
