Ingredients

  • 12 teaspoon sea salt
  • 12 teaspoon garlic powder
  • 14 teaspoon ground coriander
  • 14 teaspoon paprika (I like smoked paprika)
  • 14 teaspoon ground cumin
  • 1 cup whole wheat flour (or all purpose flour)
  • 1 12 tablespoons whole wheat flour (or all purpose flour)
  • 2 teaspoons sugar (or honey)
  • 1 teaspoon sea salt
  • 14 teaspoon fresh ground pepper
  • 10 kalamata olives, pitted and chopped
  • 1 tablespoon olive oil
  • 12 cup water

Method

  • Make the spice mixture by combining all the seasonings (first 5 ingredients) in a small bowl.
  • Set aside.
  • Put the flour, sugar, salt, pepper, ad olives in a large mixing bowl and stir to combine.
  • Add the olive oil and stir vigorously with a fork.
  • Add water and cont.
  • to stir until a ball forms.
  • Sprinkle work surface liberally with flour and turn the dough out onto the surface.
  • Knead about 2 minutes.
  • Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  • Preheat oven to 400F.
  • Remove the dough form fridge and flatten into a disk on a floured surface.
  • Roll the dough out as thinly as possible.
  • Transfer to baking sheet that has been brushed with olive oil.
  • Brush the dough with olive oil and sprinkle spice mixture on top.
  • Bake about 20 minutes or until golden brown.
  • This can be made a couple of days in advance.
  • Wrap in plastic wrap and kept in a dry place.
