Ingredients

  • 2 gal. sliced cucumbers
  • 2 c. canning salt
  • 1 bottle alum powder
  • 4 qt. sugar
  • 2 1/2 qt. vinegar
  • 4 Tbsp. pickling spice, tied up in clean cloth

Method

  • Put sliced cucumbers in jugs.
  • Boil 1 gallon of water and salt; pour over cucumbers.
  • Let set for 1 week.
  • Pour off water. Add 1 gallon of boiling water and alum powder.
  • Pour over cucumbers; let set 24 hours.
  • Drain and rinse.
  • Add 1 gallon of plain boiling water to cucumbers.
  • Let set overnight.
  • Add together the sugar, vinegar and pickling spice; boil together. Pour over cucumbers in jug.
  • Let set for 3 days.
  • Drain and save vinegar.
  • Pack cucumbers in jars.
  • Heat vinegar and pour over cucumbers and seal.
