Ingredients
- 2 gal. sliced cucumbers
- 2 c. canning salt
- 1 bottle alum powder
- 4 qt. sugar
- 2 1/2 qt. vinegar
- 4 Tbsp. pickling spice, tied up in clean cloth
Method
- Put sliced cucumbers in jugs.
- Boil 1 gallon of water and salt; pour over cucumbers.
- Let set for 1 week.
- Pour off water. Add 1 gallon of boiling water and alum powder.
- Pour over cucumbers; let set 24 hours.
- Drain and rinse.
- Add 1 gallon of plain boiling water to cucumbers.
- Let set overnight.
- Add together the sugar, vinegar and pickling spice; boil together. Pour over cucumbers in jug.
- Let set for 3 days.
- Drain and save vinegar.
- Pack cucumbers in jars.
- Heat vinegar and pour over cucumbers and seal.
