Ingredients

  • 1 can evaporated milk
  • 2 1/2 cups flour, all-purpose
  • 1 cup sugar granulated
  • 1 cup raisins, seedless if desired
  • 3/4 cup brown sugar
  • 23 cup vegetable shortening
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 teaspoon cinnamon ground
  • 3/4 teaspoon allspice ground
  • 1/2 teaspoon cloves ground
  • 1/2 teaspoon nutmeg ground
  • 3 large eggs

Method

  • Frost Old-Fashioned Spice Cake with Caramel Frosting.
  • Mix 113 cups of the evaporated milk and the vinegar; reserve.
  • Heat oven to 350F (180C).
  • Beat vinegar mixture and remaining ingredients except Caramel Frosting on low speed 30 seconds, scraping bowl constantly.
  • Beat on high speed 3 minutes, scraping bowl occasionally.
  • Pour into pan(s).
  • Bake rectangle about 45 minutes.
  • Cool rectangle on wire rack.
  • Cool layers 10 minutes; remove from pans and cool completely on wire rack.
