Ingredients

  • 1 1/2 lb. flank steak
  • 1/3 c. soy sauce
  • white wine
  • 2 Tbsp. salad oil
  • watercress sprigs
  • 1/4 c. sliced radishes
  • party red bread

Method

  • Trim fat from steak; cut to 5 inches wide.
  • Mix soy sauce and some white wine.
  • Marinate meat for 24 hours; turn occasionally. Oil steaks on both sides.
  • Place in broiler pan without rack. Broil meat 6 inches from heat for 1 minute on each side.
  • Turn steak; broil 5 minutes longer.
  • Turn and broil 5 more minutes, or until medium rare.
  • Let cool.
  • Brush meat with pan juices.
  • Chill, lightly covered, until serving time.
  • To serve, slice thin. Arrange on platter with watercress and radishes with bread nearby. Use prime or choice grade of beef.
