Ingredients

  • 2 c. finely chopped onion
  • 1 Tbsp. minced garlic
  • 1 celery rib, chopped fine
  • 1 carrot, chopped fine
  • 1/2 c. finely chopped scallion
  • 2 Tbsp. unsalted butter
  • 2 tsp. salt
  • 1 1/2 tsp. ground pepper
  • 2 tsp. Worcestershire sauce
  • 2/3 c. ketchup
  • 1 1/2 lb. ground chuck
  • 3/4 lb. ground pork
  • 1 c. fresh bread crumbs
  • 2 eggs
  • 1/3 c. minced parsley

Method

  • In large heavy skillet, cook onion, garlic, celery, carrot and scallion in butter.
  • Cook until carrots are tender, stirring occasionally.
  • Stir in salt, pepper, Worcestershire sauce and 1/3 cup ketchup; cook for 1 minute.
