Ingredients

  • 3 1/2 c. unsifted flour
  • 2 1/2 c. sugar
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 c. cooked or canned pumpkin
  • 1 c. corn oil
  • 2/3 c. water
  • 4 eggs

Method

  • Stir together in large bowl the flour, sugar, baking soda, salt, cinnamon and nutmeg.
  • In separate bowl, stir together pumpkin, corn oil and water.
  • To this mixture, add eggs, one at a time, beating well after each addition.
  • Make a well in the center of the flour mixture.
  • Add pumpkin mixture and stir just until flour is moist.
  • Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.
  • Bake at 350° for 60 to 75 minutes.
  • Remove from oven and let cool 10 minutes before removing from pan.
  • Cool on rack.
