Ingredients
- 3 1/2 c. unsifted flour
- 2 1/2 c. sugar
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 2 c. cooked or canned pumpkin
- 1 c. corn oil
- 2/3 c. water
- 4 eggs
Method
- Stir together in large bowl the flour, sugar, baking soda, salt, cinnamon and nutmeg.
- In separate bowl, stir together pumpkin, corn oil and water.
- To this mixture, add eggs, one at a time, beating well after each addition.
- Make a well in the center of the flour mixture.
- Add pumpkin mixture and stir just until flour is moist.
- Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.
- Bake at 350° for 60 to 75 minutes.
- Remove from oven and let cool 10 minutes before removing from pan.
- Cool on rack.
