Ingredients

  • 1 1/4 c. boiling water
  • 1 c. oatmeal
  • 1/2 c. raisins
  • 1 c. white sugar
  • 1 c. brown sugar
  • 2 sticks margarine
  • 2 eggs
  • 1 1/3 c. flour
  • confectioners sugar
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 c. pecans, chopped
  • 1 1/2 c. brown sugar
  • 1 small can crushed pineapple
  • 1 c. coconut

Method

  • Mix together boiling water, oatmeal and raisins.
  • Let stand about 15 to 20 minutes.
  • In large bowl cream together 1 cup white sugar, 1 cup brown sugar and 1 stick margarine.
  • Then add eggs; blend well.
  • Add the raisin-oatmeal mixture, flour, cinnamon, salt, soda, vanilla and nuts.
  • Mix well.
  • Bake in greased 9 x 13-inch pan for 35 to 45 minutes at 350°.
  • Cool.
