Ingredients

  • 4 salmon filets, preferably wild salmon
  • 1/4 c. Dijon mustard
  • 2 limes, zested and juiced
  • 2 T. freshly grated ginger
  • 1/4 c. olive oil
  • 1/2 tsp. dill
  • 1/2 c. plain organic yogurt or Kefir
  • dash Old Bay Seasoning
  • 1/2 c. honey
  • salt & pepper to taste

Method

  • Spray cooking spray in a baking dish and place the salmon skin-side down. In a
  • medium bowl, combine remaining ingredients with a whisk. Pour over the salmon and cook at 400° for 10-15 minutes, depending on thickness [watch it]. Serve with wild rice and asparagus. Salmon tastes even better if the sauce is allowed to sit on the salmon for about a 1/2 hour prior to cooking.
