Ingredients

  • 1 envelope Knox unflavored gelatine
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 eggs
  • 1 can Eagle Brand milk
  • 2 c. cooked, mashed sweet potatoes
  • 1 graham cracker crust

Method

  • In saucepan, mix gelatine and spices; blend in eggs, beaten with milk.
  • Let stand for 1 minute.
  • Heat over low heat until gelatine is completely dissolved, about 10 minutes.
  • Stir constantly.
  • Blend in potatoes.
  • Pour mixture into prepared crust. Chill until firm.
  • May be served with whipped cream and chopped nuts.
