Ingredients
- whole, unpeeled, washed potatoes (allow 2 per serving)
- butter or margarine to taste
- 6 or more slices bacon, finely chopped
- 2 medium onions, coarsely chopped
Method
- Boil
- potatoes whole with skins on.
- While potatoes are cooking,
- brown
- bacon in a skillet until crisp.
- Remove bacon bits
- from skillet.
- In
- bacon fat, brown onions until almost black.
- Drain
- off fat.
- Peel and coarsely chop hot potatoes. Add bacon
- bits,
- onions
- and butter to potatoes.
- Mix well. Serve as a side dish with meat and gravy.
