Ingredients

  • whole, unpeeled, washed potatoes (allow 2 per serving)
  • butter or margarine to taste
  • 6 or more slices bacon, finely chopped
  • 2 medium onions, coarsely chopped

Method

  • Boil
  • potatoes whole with skins on.
  • While potatoes are cooking,
  • brown
  • bacon in a skillet until crisp.
  • Remove bacon bits
  • from skillet.
  • In
  • bacon fat, brown onions until almost black.
  • Drain
  • off fat.
  • Peel and coarsely chop hot potatoes. Add bacon
  • bits,
  • onions
  • and butter to potatoes.
  • Mix well. Serve as a side dish with meat and gravy.
