Ingredients

  • 1/2 c. light margarine (stick)
  • 1/4 c. sugar
  • 1/4 c. egg substitute
  • 1/2 tsp. ginger
  • 1/2 tsp. cinnamon
  • 1/4 c. molasses
  • 1 1/4 c. self-rising flour
  • 1/2 tsp. soda
  • 1/2 c. boiling water
  • applesauce or dried apples

Method

  • Cream margarine and sugar; add molasses.
  • Add egg substitute; beat well.
  • Add ginger, cinnamon and flour; mix well.
  • Dissolve soda in boiling water.
  • Add to mixture and mix well.
  • Pour into 3 (9-inch) cake pans that have been sprayed with cooking spray. Batter will be thin.
  • Bake at 375° for 12 to 15 minutes.
  • Cool; remove from pans.
  • Stack with applesauce or dried apples between each layer.
