Ingredients

  • 2 1/2 cups pumpkin
  • 2 cups brown sugar
  • 2 tablespoons cooking oil
  • 3 tablespoons applesauce
  • 1 egg
  • 1 egg white
  • 1/2 cup apple juice concentrate
  • 1 1/2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 1/2 teaspoons ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/3 cup finely chopped crystallized ginger (or
  • ginger in syrup)

Method

  • Preheat oven to 350 degrees farenheit.
  • Mix pumpkin, sugar, oil, and applesauce in large bowl. Add egg and egg white. Beat until smooth. Stir in juice. Mix dry ingredients in separate bowl. Gradually add this to the pumpkin mixture. Fold in chopped ginger. Fill muffin tins 2/3 full and bake for ~25 minutes or until toothpick comes out clean.
