Ingredients

  • 5 lb. hamburger
  • 1 Tbsp. Tender Quick Morton salt (for curing)
  • 2 1/2 tsp. mustard seed
  • 2 1/2 tsp. garlic powder
  • 2 1/2 tsp. cracked black pepper
  • 1 tsp. hickory salt
  • 1 tsp. liquid smoke

Method

  • Heat oven to 150°.
  • Mix all ingredients together thoroughly on the first day.
  • Refrigerate.
  • Remix on second day.
  • Refrigerate. Remix on the third day.
  • Shape into 6 (4 to 5 ounce) rolls and refrigerate.
  • On the fourth day, place on cookie sheet and bake in a 150° oven for 4 hours and turn on other side.
  • Cook for another 4 hours.
  • Cool 2 to 3 hours then wrap individually into regular Reynolds Wrap.
  • Freeze to eat later or refrigerate to eat now. Serve cold slices as an appetizer or snack.
