Ingredients

  • 3 1/2 c. coarsely chopped chicken or turkey
  • 2 Tbsp. butter
  • 3 finely minced onion
  • 3 Tbsp. flour
  • 1 1/2 c. chicken broth
  • salt and freshly ground pepper to taste
  • 1/4 tsp. nutmeg
  • 3 drops Tabasco
  • 3 egg yolks, beaten
  • flour for dredging
  • 1 egg, lightly beaten
  • 3 Tbsp. water
  • 1 1/2 c. fresh bread crumbs
  • oil for frying
  • mushroom sauce

Method

  • Melt the butter in saucepan and add onion, stirring until wilted.
  • Sprinkle with flour and stir with a wire whisk as you add the chicken broth.
  • Stir rapidly.
  • Stir in chicken and add salt and pepper, nutmeg and Tabasco.
  • Remove from heat, add yolks return to heat.
  • Cook about 2 minutes, stirring constantly.
  • Spoon in an 8 x 8 x 2-inch dish that has been buttered.
  • Cover with buttered wax paper.
  • Chill overnight.
