Ingredients
- 4 lb. chicken
- 1/4 - 1/2 onion
- 1-2 chilaca or bell pepper
- 1 tomato
- seasoning salt
- salt (opt.)
Method
- Season chicken pieces with seasoning salt and place in casserole.
- Add
- chopped vegetables, cover and bake at 250°F for 1 1/2 - 2 hrs.
- May also be cooked in electric skillet or stovetop for 1 hr.
- Chicken will be juicy.
- For gravy:
- Remove chicken and blend the rest in blender and add 1/2 c., or more, cream and 1/2 - 1 Tbsp. cornstarch.
- Heat thoroughly.
