Ingredients
- 1/2 c. butter
- 1 1/2 Tbsp. flour
- 1 Tbsp. Dijon or other dark mustard
- 10 c. beef broth or 10 bouillon cubes plus 10 c. water
- 4 large onions
- salt and pepper to taste
- Swiss cheese
- bread slices
Method
- Slice onions and saute until light brown; add flour, mustard and seasonings.
- Carefully add water or broth.
- Simmer for at least 1 1/2 to 2 hours or more.
- To serve, place soup in bowls; add slices of bread and cheese.
- Microwave each serving until cheese melts.
