Ingredients

  • 30 unbaked miniature tart shells
  • 4 strips bacon
  • 1 sm. can mushrooms, liquid removed
  • 1/4 c. minced green onions
  • 3 Large eggs
  • 1 c. lowfat sour cream

Method

  • Chop bacon, fry till crisp.
  • Remove fat.
  • Add in onions, mushrooms and a dash of salt.
  • Cook till tender.
  • Set aside to cold.
  • Beat Large eggs, stir in lowfat sour cream.
  • Divide bacon and mushroom mix proportionately in shells.
  • Spoon egg mix with tsp.
  • into shell till filled.
  • Bake at 375 degrees for 20 min.
  • Can be reheated.
  • Freezes well.
