Ingredients
- 8 whole eggs
- 4 egg whites
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbsp. butter
- 1/2 c. finely chopped onion
- 1 tomato, halved, seeded and diced
- 2 jalapeno peppers, seeded and finely chopped
- 1 Tbsp. chopped fresh cilantro
Method
- Whisk together eggs, egg whites, salt and pepper in a bowl. Heat butter in large nonstick skillet over medium heat.
- Add onion, tomato, jalapenos and cilantro.
- Saute 2 to 3 minutes until onion is clear.
- Add egg mixture to skillet.
- Cook, stirring, until desired consistency, 4 to 6 minutes.
- Makes 4 servings.
