Ingredients

  • 8 whole eggs
  • 4 egg whites
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. butter
  • 1/2 c. finely chopped onion
  • 1 tomato, halved, seeded and diced
  • 2 jalapeno peppers, seeded and finely chopped
  • 1 Tbsp. chopped fresh cilantro

Method

  • Whisk together eggs, egg whites, salt and pepper in a bowl. Heat butter in large nonstick skillet over medium heat.
  • Add onion, tomato, jalapenos and cilantro.
  • Saute 2 to 3 minutes until onion is clear.
  • Add egg mixture to skillet.
  • Cook, stirring, until desired consistency, 4 to 6 minutes.
  • Makes 4 servings.
