- 3 c. self-rising corn meal
- 2 c. buttermilk
- 1 1/2 c. grated Cheddar cheese
- 4 pickled jalapeno peppers
- 1 can cream-style corn
- 1/2 chopped bell pepper
- 3 eggs
- 3 Tbsp. sugar
- 1 c. oil
- 1 tsp. baking soda
- 3 Tbsp. flour
- 1 tsp. salt
- 1 lb. ground beef
- 2 chopped onions
Method
- Brown ground beef, onions and bell pepper until meat is done; drain fat.
- Mix corn meal and salt.
- Add flour, soda, milk, eggs and peppers.
- Pour half of the corn meal mixture in pan.
- Layer with corn, meat mixture and cheese.
- Pour remaining corn meal mixture over top and bake at 400° for 45 minutes.
