Ingredients

  • 3 c. self-rising corn meal
  • 2 c. buttermilk
  • 1 1/2 c. grated Cheddar cheese
  • 4 pickled jalapeno peppers
  • 1 can cream-style corn
  • 1/2 chopped bell pepper
  • 3 eggs
  • 3 Tbsp. sugar
  • 1 c. oil
  • 1 tsp. baking soda
  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1 lb. ground beef
  • 2 chopped onions

Method

  • Brown ground beef, onions and bell pepper until meat is done; drain fat.
  • Mix corn meal and salt.
  • Add flour, soda, milk, eggs and peppers.
  • Pour half of the corn meal mixture in pan.
  • Layer with corn, meat mixture and cheese.
  • Pour remaining corn meal mixture over top and bake at 400° for 45 minutes.
