Ingredients
- 3 c. self-rising cornmeal
- 1 2/3 c. milk
- 3 tsp. sugar
- 3 eggs
- 1 onion, chopped
- 1 can creamed corn
- 1/4 c. vegetable oil
- 7 pods mildly hot peppers, chopped
- 1 1/2 c. shredded Cheddar cheese
Method
- Mix together milk, eggs, sugar and oil.
- Slowly add cornmeal. Blend thoroughly.
- Add onion, corn, peppers and cheese.
- Bake in 9 x 13-inch greased cake pan at 425° for 30 minutes (or until golden brown).
