Ingredients

  • 1 c. sugar
  • 1/8 tsp. salt
  • 3 eggs, separated
  • 1 pie shell
  • 3 Tbsp. cornstarch
  • 20 oz. crushed pineapple (undrained)
  • 1 Tbsp. lemon juice

Method

  • In saucepan, combine sugar, cornstarch and salt. Stir in pineapple and juice. Bring to a boil; cook and stir 2 minutes. Gradually stir 1 cup hot filling into egg yolks. Return all to pan and bring to a boil; cook and stir 2 minutes. Remove from heat and stir in lemon juice. Cover with lid to keep warm.
