Ingredients
- 1 c. sugar
- 1/8 tsp. salt
- 3 eggs, separated
- 1 pie shell
- 3 Tbsp. cornstarch
- 20 oz. crushed pineapple (undrained)
- 1 Tbsp. lemon juice
Method
- In saucepan, combine sugar, cornstarch and salt. Stir in pineapple and juice. Bring to a boil; cook and stir 2 minutes. Gradually stir 1 cup hot filling into egg yolks. Return all to pan and bring to a boil; cook and stir 2 minutes. Remove from heat and stir in lemon juice. Cover with lid to keep warm.
